With a career in F&B spanning more than 20 years, Raymond Santamaria will bring insights gleaned from the coal face operating in key brand, commercial, marketing & operational roles. As a retained consultant for Apex Hotels, Raymond has developed leading concepts and a strategic F&B roadmap for the group – including recently for the Lazy Ballerinas wine bar, shortlisted in the 2019 Restaurant & Bar Design Awards for identity. As Marketing Director, EMEA for The ONE Group he oversaw STK restaurants and Radio rooftop bars across the region, as well as Heliot Steak House at the Hippodrome Casino, whilst overseeing the first ever global franchise of the STK brand. With further experience earned in senior roles at the Concerto Group, Nestlé, Mitchells & Butlers, Marks & Spencer and at catering giant Elior; the session is bound to be informative and valuable to anyone involved in developing F&B within their property.
